A couple of weeks ago I had a hankering for lasagna. It’s been sometime since I’ve made lasagna. This dinner turned out so delicious that I had to share! This is an easy weeknight lasagna recipe. The ingredients are simple and the cleanup is minimal. Prep time is roughly 20 minutes while baking time is about the same. In under an hour, you’ll have a delicious meal that makes enough to easily serve 4-5 people! I prepared a simple salad and made my homemade bread to go along with it!
Easy Weeknight Lasagna Recipe
Ingredients
Lasagna noodles (~9 noodles)
1 jar Rao’s marinara sauce
Shredded mozerella cheese
Ricotta cheese
1 lb ground beef
Salt & Pepper
1/2 yellow onion
2 tbsp diced garlic
Olive oil
Parsley (optional)
Directions
- Preheat oven to 375 degrees.
- Cook ground beef in a skillet on the stove top. Cook through completely, until no pink is left. After cooking all the way through, I like to use a colander to drain all of the grease off of my ground beef and even wash the ground beef by using the sink nozzle over the beef while in the colander. This removes all of the grease and takes down the fat in the dish.
- When the ground beef is cooked through, push to one side of skillet, add a drizzle of olive oil. Once the olive oil is warm (sprinkle a tiny bit of water on the oil – it will sizzle when warm), add diced onion and garlic to the oil. Cook until fragrant and onions are translucent.
- Turn heat off on the skillet. Add Rao’s marinara sauce (or any marinara sauce you have on hand). I like to use the entire 24 oz jar. Feel free to add as little or as much for your liking. Mix ground beef, onions, garlic, and sauce.
- Bring a large pot of water to a boil. Add a few pinches of salt to the water. Add the lasagna noodles to the pot once the water is boiling. Cook the noodles roughly 8 mins, until they’re almost completely cooked. It’s ok if the noodles don’t fit into the pot when first putting them in, as they cook, they will soften and slide underwater.
- Now we’re ready to layer! Use olive oil spray or similar cooking spray to line your baking dish. I use a 15 x 10 inch pyrex dish. First, lay three lasagna noodles down in the dish as the first layer. Next, add the ground beef mixture. Add a light layer of the ricotta cheese. Repeat the layering process. When you complete the layering, add shredded mozzarella to the top.
- Bake at 375 degrees for 20 minutes. If you prefer the top to have a golden, bubbly finish, hit it with the broil setting for 3 minutes when finished baking.
- Carefully remove the dish from the oven, let it cool for a few minutes, sprinkle parsley on top if you have it, cut, serve, and enjoy!
